Kitchen Close Competencies
Reports to Manager on Duty
Job Summary:
Provides friendly, courteous guest service and hospitality to fulfill our mission and increase guest loyalty to encourage return visits. Perform kitchen closing procedures timely and accurately without disrupting the guests’ experience.
Essential Functions:
1.Demonstrates effective food safety practices consistently.
2.Maintains a guest focus, conveys friendly, courteous interaction to gain guest loyalty and encourage return visits.
3.Maintain fresh sanitized water at 200 PPM and clean towels as needed.
4.Clean and sanitize designated kitchen surfaces and closing kitchen dishes effectively.
5.Prepare kitchen equipment for closing according to procedures.
6.Remove fish and burger meat from carts, clean and sanitize carts, label, date and refrigerate product.
7.Rotate buns and breads using FIFO and wrap tight to prevent them from drying out.
8.Close condiment table covering sliced cheese to prevent it from drying out.
9.Scrape grill clean, wipe side wall and front of grill. Turn gas on grill to OFF.
10.Transfer hot held products to clean containers; cool, label, date and refrigerate.
11.Clean and polish stainless steal surfaces using approved cleaner.
12.Remove kitchen garbage, (for safety reasons, do not take it outside after dark).
13.Clean and sanitize front-line and kitchen dishes correctly.
14.Turn off kitchen equipment except the hoods, which are left on for one half hour after all other kitchen equipment is turned off.
15.Clean and polish stainless steel areas as needed.
16.Return and reassemble kitchen closing dishes correctly.
17.Record rotated food items on kitchen Product Rotation Report.
18.Record wasted product on the Daily Inventory Waste Sheet.
19.Sweep and mop kitchen and back-of-the house flooring using wet floor signs.
Qualification Standards:
- Must meet the federal age requirements for the position responsibilities.
- Initiate friendly and courteous interaction with guests.
- Provide guest service and hospitality to achieve that “Every guest who chooses Culver’s leaves happy” and gain guest loyalty.
- Stand or walk during entire shift.
- Reach, bend and clean surfaces regularly.
- Carry up to 40 pounds several times per shift.
- Read menu abbreviations and operational procedures as needed.
- Immerse hands in detergent and sanitized water very frequently.
- Work safely to avoid hazards including but not limited to slips, tripping, falls and burns.
