The Food Service Manager is responsible for administering and supervising the camp's food planning, purchasing, preparation, and service. Maintain health and safety standards, safe food standards, ACA standards, and a sanitary kitchen. The Food Service Manager must be able to supervise cooks and assistants; identify and respond to hazards; plan nutritious menus taking into account camper and staff allergies and dietary restrictions; order food and prepare and present tasteful food; able to operate food service equipment such as mixer, ovens, stoves, and other tools used in normal food service.
ACCOUNTABILITIES
· Plan balanced menus within budget and taking into account camper/staff food allergies and dietary restrictions; post daily menus.
· Order food and supplies through approved vendors; check food delivery against food orders.
· Properly stores food and kitchen supplies.
· Train, supervise, and direct the work of kitchen staff, including kitchen aides.
· Cook, trim, portion, carve/bake, etc. meats, vegetables, salads, breads, deserts, etc.
· Responsible for ensuring that proper food sanitation procedures are practiced at all times in accordance with state and local requirements as well as the American Camp Association standards in food service.
· Work with unit staff to plan and prepare to pack out meals.
· Keep running inventory and records; make necessary reports as requested by Program Engagement Manager – Outdoors.
· Ensure cleanliness of kitchen and dining area.
· Assure that the health inspection report is available.
· Work with council staff to provide training for resident camp temporary staff.
· Submit a written evaluation of the camp at the end of the season/session.
· Meet with Program Engagement Manager-Outdoors and/or administrative staff as necessary.
· Willingness to stay on the camp property through the planning, implementation, and clean up after all meals.
QUALIFICATIONS
· Be at least 21 years of age
· Previous experience working in a commercial kitchen, particularly in a camp or school setting.
· Knowledgeable in all state of Illinois and local health requirements for food service and holds or is willing to hold food handling and allergy certifications.
· Holds or is willing to obtain current certification in First Aid and CPR
· Previous experience supervising others.
· Ability to work with children and other staff
· Flexibility in planning menus for children and special events
· Physical signed by a medical professional within the past 12 months
· Current driver’s license
· Willingness to complete Youth Mental Health First Aid training
· Willingness to complete Illinois Mandated Reporter training
· Ability to work with campers and staff members of diverse backgrounds
· Understanding and acceptance of the Girl Scout promise, law, beliefs, and principles. Willingness to become a member of Girl Scouts of the USA and consent to a criminal background check
PHYSICAL REQUIREMENTS
· Willingness to perform tasks that involve the ability to exert light physical effort which may include some lifting, carrying, pushing, and/or pulling objects and materials of moderate weight (20-25 pounds)
· Daily exposure to seasonal weather conditions
