Food Service Specialist - GLCAP Fremont Senior Center - 6:30am - 3:30pm
Summary: Using culinary expertise to create appetizing dishes for seniors to enjoy. Ensure that all dishes are cooked well and presented in an aesthetically pleasing way. Prepares, packages, and delivers meals; maintains sanitary environment for preparation, and storage.

Education:
Required High school diploma or general equivalency diploma (GED). Must obtain ODH Level II Food Protection Manager Certification within three months and SeaFood HAACAP Certification within one year. Associates Degree in Culinary Arts or related certificate preferred.
Experience:
Required a minimum of three years' experience of bulk food preparation and service. One to three years of supervisory experience.

- Initial and periodic Motor Vehicle Records checks, maintain a valid driver’s license, and maintain a safe driving record.
- Must have insured, dependable transportation available for daily use.
- Must submit to initial and/or periodic state and/or federal criminal checks.
- Must submit to initial and periodic drug and alcohol testing.
Essential Duties and Responsibilities:
- Construct high quality plate presentations both design and taste wise; approve dishes before they reach the participant at the Fremont Senior Center; and maintain ongoing awareness of culinary trends while using standard recipes and approved menus.
- Ensure the use of fresh herbs and vegetables from the culinary gardens – sourcing unique ingredients for menus.
- Manage the use of the Blast Chiller for food preservation, to reduce food waste, and during entrée preparation.
- Perform daily, weekly, monthly sanitation of equipment and facilities in compliance with state and local sanitation regulations.
- Oversee and direct the work of kitchen staff. Report safety issues, concerns, or injuries to the Nutrition Coordinator immediately.
- Prepare and package bulk meals within specified time schedule using approved portion control.
- Prepare and submit required production records, temperature log and daily prep sheet.
