The ideal candidate will be a strong leader with excellent communication and follow up, and have a passion for culinary excellence. At least 1-2 years of Sous Chef experience with a solid hotel background is recommended.
What will I be doing?
Our ideal candidate as a Sr. Sous Chef would be responsible for performing the following tasks to the highest standards:
- Assist the Executive Sous Chef in the direction and oversight of all culinary operations, to include, but not limited to, preparation and production of all hotel meals, food quality and presentation, compliance with all safety and sanitation standards and regulation, team member productivity and performance; implementation, development and enforcement of policies to control food cost, labor cost, quality and overall profitability.
- Supervises kitchen staff in the proper preparation, cooking and garnishing and presentation of various menu items.
- Ensures proper receiving, storage (including temperature setting) and rotation of food products to comply with health department regulations.
- Leads menu-planning activities.
- Schedules culinary and stewarding staff so that proper coverage is maintained while keeping payroll costs in line.
- Creates and implements menu selections for special events based on current food trends and regional tastes in partnership with the Executive Chefs and Director of Food and Beverage, as needed.
- Ensure compliance with federal, state, local and company health, safety, sanitation and alcohol awareness standards
- Assist in monitoring and developing team member performance to include, but not limited to, providing supervision, conducting coaching and assisting with evaluations, training, scheduling and assigning work and delivering recognition and reward.
- Be able to personally communicate with guests effectively to customize customers’ orders according to preferences and food allergy considerations.
