Hotel AKA Brickell is recruiting a Banquet Chef. We are looking for a candidate that has experience in the Banquets for a Luxury property.

Responsibilities:
- Manage the daily production of food for the team member breakroom and all the catered events; control food and labor costs, ensure preparation, plating and presentation standards are maintained, the appropriate quantity of food is prepared and safety standards and regulations are followed to provide top quality food.
- Supervise banquet kitchen and Stewarding Team Members; Hire, schedule, train, develop, empower, coach and counsel, resolve problems, provide open communication, recommend discipline, as appropriate.
- Analyze Banquet Event Orders, plan and coordinate the functions with the Catering staff to ensure the events meet/exceed customer expectations.
- Monitor and control the maintenance/sanitation of the kitchen and equipment to ensure a healthy, safe work environment which meets/exceeds federal, state, and corporate regulations.
- Assist in the creation and planning of menus and implement changes to continue to attract business.
- Assist with the Outlets (NKB, Pool & In Room Dining) daily production of food, control food and labor costs, ensure preparation, plating and presentation standards are maintained during the renovation period.
- Participate in the development of the annual budget.
- Attend mandatory meetings and contribute to these meetings in a professionally effective manner; regularly communicate with all team members.
- Participate in community public relations for the hotel.
- Other duties as assigned.

- Thorough knowledge of food and beverage operations including foods, beverages, supervisory practices and philosophy, service techniques, kitchen operation and guest interaction.
- Demonstrated strong resident service, problem solving and decision making skills.
- Successfully manages people to achieve performance goals. Excellent people management skills including resolving conflict, coaching and developing others, promoting teamwork, and performance management.
- Takes an exhaustive approach to every task. Committed to comprehensive and in-depth analysis, planning, and implementation of every work effort.
Required Qualifications:
- High school degree or equivalent.
- Associates degree or higher.
- Minimum of three years of experience in a Culinary supervisory/management position.
- Ability to be flexible with work schedule including nights, weekends and holidays.
- Meticulous attention to detail
- Food Handler Certification. Certified Food Service Professional preferred.
- Skills Needed: Motivational, verbal communication, written communication and manageability.
Physical Requirements:
- Must be able to lift up to 50 lbs.
- Sits, stands, bends, stretches, lifts items and moves intermittently during working hours.
Job Type: Full-time
Pay: $70,000.00 - $75,000.00 per year
