Job: Head Culinary Manager

Day to day you’ll…:
● Have overall responsibility for maintaining costs, high morale and a smooth-running kitchen.
● Develop profitable, seasonal menus while maintaining profitable food and labor costs.
● Support, communicate and collaborate well with culinary staff, FOH staff and owners.
● Maintain staff scheduling, labor budgets, training, mentoring.
● Source and negotiate with vendors for best quality and pricing.
● Establish and regulate protocols, procedures and expectations along with the GM.
● Ensure high standards of sanitation, cleanliness and safety.
● Prepare and present kitchen staff meetings and line-ups.
● Cook on the line, prep and/or expo when needed for volume, training and managing.
● Periodically visit the dining area and speak to guests.
● Maintain healthy communication and collaboration daily with FOH management.
● Report to GM and owners.
