Roles:
The Catering Manager will execute banquets, weddings, and other social or business functions; supply food and other services; and supervise catering staff.
Responsibilities:
- Promote and portray the VIVÂMEE Values.
- Know, understand, and adhere to company established policies and procedures.
- Requisitions additional help as required by banquet schedule.
- Sets up and arranges tables and chairs, serving stations, lines, tableware, serveware, and silverware.
- Plans the serving order and orchestrates its completion in a timely, quiet, and courteous manner.
- Supervises wait staff and set up staff. Trains all set up and wait staff. Ensures that all Banquet Servers are ready to serve the meal when it is prepared.
- Takes the initiative to greet guests in a friendly and warm manner and ensures all needs are met. Observes guests to fulfill any additional requests, to perceive when next course should begin, or when meal is completed.
- Aides in the operation of Catering department.
- Manages schedules for all staff
- Interviews and hires all catering staff.
- Ensures proper banquet check control.
- Actively participates in room set up and service.
- Inventories all equipment.
- Ensures the venue is clean and that food is handled in a sanitary manner.
- Maintains accurate records of costs for catering services.
- Displays awareness and compliance with security, safety, emergency, and energy procedures.
- As required, may assist with scheduling and planning of other aspects of the event, including decorations, flowers, photographer, music, or entertainment.
- Other duties as assigned.
Requirements
- Minimum 5 years’ experience in banquets or food service.
- Excellent organizational skills and attention to detail.
- Excellent communication and interpersonal skills.
- Extensive knowledge of event planning and catering requirements.
- Ability to work with clients to determine and anticipate needs of the event.
- Excellent managerial and supervisory skills.
- Ability to work at a fast pace.
- Extensive knowledge of food hygiene.
