Description
Lake Barkley State Resort Park is hiring a Park Chef II. The position will be responsible and assist the Food and Beverage Operations Manager for all aspects of the food and catering operations at this large resort park.

Responsibilities will Include:
Coordinating operations of the kitchen facility with the other facilities at the park for activities and events at the resort
Supervising employees involved in the preparation and serving of foods in the resort park’s restaurant
Estimating and requisitioning food and kitchen supplies
Determining the cost of foods served during normal operations and for group meetings, parties and conventions
Preparing menus and planning meals for the complete food operation facility
Participating in the preparation activities in the kitchen
Ensuring the proper utilization and maintenance of the kitchen and its facilities
Utilizing the most modern methods, techniques and procedures in the preserving, preparation and serving of foods
Interpreting and enforcing departmental rules, regulations and policies
Participating in the revision or development of policies relative to the food service operation
Preparing and maintaining operating records such as food inventories, work schedules, time and attendance records, purchasing records and equipment service records
Minimum Requirements
EDUCATION: High school graduate.
EXPERIENCE, TRAINING, OR SKILLS: Must have four years of food preparation experience in salads, vegetables, or meats. Two years of the required experience must include management or supervision in a large-scale institutional or commercial full-service restaurant or state resort park food facility.
Substitute EDUCATION for EXPERIENCE: One year of culinary training will substitute for one year of the food preparation experience.

This job has an initial and promotional probationary period of 6 months, except as provided in KRS 18A.111.
