THE ROLE
The Director of Plaza Restaurant Operations will manage all aspects of the Plaza restaurant, its activities, and the relationship with the Spurs, guests, employees, community, and industry. Responsible for the overall financial success and operational goals, with the expectation to focus entirely on developing operating policies and procedures and direct the work of all department managers, while ensuring a great guest experience. The position reports to the General Manager of The Rock at La Cantera.
ESSENTIAL FUNCTIONS
- Manage restaurant operations; including hiring, training, scheduling, coaching, and counseling, auditing and inspecting work to ensure standards are met, promoting teamwork and inclusiveness, scheduling, and conducting performance management with staff.
- Work with the General Manager and Chef Partner to develop food and beverage programs & promotions enterprise wide.
- Enforce conformance to the regulations of the alcoholic beverage commission.
- Maintain positive guest relations; respond to guest requests and ensure alignment with company standards; investigate and resolve complaints about quality and/or service.
- Review operations and related reports to identify problems, concerns and opportunities for improvement and implement solutions. Accurately identify and respond to changes in the business environment.
- Meet with assigned leaders to achieve restaurant and beverage operational objectives by contributing information and recommendations to strategic plans and reviews; prepare and complete action plans; implement production, productivity, quality, and customer-service standards; determine system improvements and implement change.
- Manage all assigned restaurant operating expenses and budgets to ensure profitability and efficiency.
- Apply government regulations and ensure all facilities, equipment, and work areas are maintained in a sanitary condition and operating as per health codes.
- Ensures that premium standards of food, beverage, entertainment, and other club services are delivered consistently.
- In conjunction with the Human Resources Manager and department supervisors, establish employee rules and regulations, work schedules, internal controls, and a performance appraisal system.
- Establishes and monitors compliance with purchasing policies and procedures; reviews and approves purchasing for the food and beverage operations.
- Consistently ensures the restaurant is operated in accordance with all applicable local, state, and federal laws.
QUALIFICATIONS
To perform this job successfully, the candidate must be able to perform each essential duty above at the highest levels. The requirements listed below are representative of the knowledge, skill, and/or ability required.
- Bachelor’s degree in hospitality, Restaurant, Foodservice or related field or equivalent combination of education and experience
- SERV Safe Certification
- Organized, detailed oriented, and ability to adapt quickly to changing priorities.
- Strong computer skills Microsoft Office (Word, Excel, and Outlook) and Windows XP, including computer-based cash handling experience.
- Experience with vendor negotiations.
- Proficient written, verbal, and interpersonal communication skills
- Strong POS operational and programming experience
- Knowledge of government health, hotel, or food service regulations
- Operational financial management accountability and budgeting experience
- Five (5) years progressive management experience in food and beverage operations including upscale and/or Fine Dining Experience.
