What are the responsibilities and job description for the Pastry Chef position at Maman - USA?

You will be working as the Pastry Chef for Maman in the Miami Area from a brand new kitchen located in Wynwood opening in December. (Contract would start by the end of November).
You will be in charge of the Pastry Department for this region working in close contact with the Executive Pastry Chef.
Headquarters are based in NYC and every training will occur there before new menus. (4 times/year)

You will be in charge of:

- Production and organization of the menus within the Pastry Department.
- Events and catering orders.
- Management of a team. (Schedule, Training, Hiring..)
- Supplying different locations on a daily basis with freshly baked goods.
- Maintaining the cleanliness of the kitchen (HACCP...)
- Maintaining equipments in use.
- Following guidelines from the Executive Pastry Chef and/or Finance department.
- Quality and Quantity control.
- Creation of custom items or Limited items.

To become the Pastry Chef for Maman Miami you need to:

- Be dynamic, passionate, pedagogue and organized.
- Able to perform all tasks required in the production of baked goods. (Mixing, cutting, shaping, lifting, pipping, scaling..)
- Anticipate. Be a step ahead.
- Teach train and share knowledge with your team.
- Communicate. Within your team but also with other departments in the company if needed.
- Create and maintain a dynamic and respectul work environment. Efficiency is key and pressure does not help.
- Must be knowlegeable about French and American pastry making including Bread, fermentation, Laminated dough, Viennoiserie, different types of creams/fillings...
- Know there is always a solution.
- Be a Team player.
- Have an eye for quality.

Pay: $70,000.00 - $76,000.00 per year
