Education
- Bachelor’s Degree in Nutrition or Dietetics.
Other Requirements
- Must be a Registered Dietitian (RD) through the Arizona Academy of Nutrition and Dietetics or be eligible for Registered Dietitian (RD) credentials. Eligible candidates must successfully pass the national RD exam within six (6) months of hire.
Training with the exception of Arizona driver’s license to be provided on-the-job:
- FEMA NIMS – IS100 AND 700
- OSHA training
- ADP payroll training
- PREA training
- A valid Arizona driver’s license
- Prior to hiring, the Sheriff's Office requires that all candidates pass an extensive background review.
Our Preferred Candidate has
- Two (2) years of experience as a Registered Dietitian
- Plans the menus for all the MCSO facilities
- Consults with the Production Supervisors and the Commander to see if changes need to be made to the menu due to equipment availability, donated goods, and special buy products in order to reduce food costs
- Distributes menus to each facility
- Analyzes the menus and submit report to the Medical Director of Correctional Health Services
- Conducts inspections and follow-up inspections to ensure compliance
- Oversees the preparation of diet meals and vegetarian meals
- Counsels inmates and provide general diet information to inmates
- Assess special needs of inmates, review medical chart and maintain the data
- Implements instant changes to the menu as a result of specials buys and donated products
- Educates and instructs Food Services staff to make the special diets as required
- Prepares specific diet sheets
- Revise and update the Diet Manual
- Writes new policy and revise old policy
- Assists in preparation of inmate grievances
- Trains new employees
- Responds to inquiries from MCSO health care providers, detention officer and other staff relating to meal planning and available diets
- Assists the Food Services staff in cost control measures; writes reports; gather research data to monitor trends
- Maintains registration as a dietitian
- Be present at work site to perform any/all assigned duties that are scheduled and/or assigned by the Supervisor or Commander

Knowledge, Skills, and Abilities
Knowledge of
- fundamental theories, concepts, methods, and basic sciences involved in nutrition
- teaching and training methods applicable to nutrition and adult education
- above average communication (verbal and written)
- plan and develop menus, formulate nutritional care plans, reconcile inmate diet grievances, and coordinate nutritional services between Correctional Health and Food Services
- to write reports on nutrition services and dietary statistics, research nutritional data, conduct orientation and in-service training for food services and medical personnel
- develop standard diet modifications from master menu, authorize vegetarian diets for qualified inmates, enter data into a computer and provide dietary counseling when needed
