Reporting Structure
A Butcher will report directly to the Executive Chef and Sous Chef team with a dotted line relationship to the Corporate Executive Chef and Chef/Owner, Danny Grant.
What You Will Do
- Whole fish butchery
- Fabrication of whole sides of dry-aged beef
- Sharpen and adjust cutting equipment
- Receive, inspect, and store meat upon delivery
- Cut, bone, or grind pieces of meat
- Store meats in refrigerators or freezers at the required temperature
- Keep inventory of meat sales and order meat supplies
- Clean equipment and work areas to maintain health and sanitation standards
- Negotiating and confirming orders with suppliers
- Adhering to food safety and sanitation control
- A minimum of 2 years of experience in kitchen preparation and cooking; at least 6 months experience in a similar capacity
- Ability to use hand tools, stand or walk for extended periods, lift heavy items, and work in cold environments
- Must be able to work in a fast-paced environment while standing (up to 8 hours) for long periods of time
- Must be able to bend, stoop, squat and lift up to 50 lbs. on a regular and continuous basis
- Must be able to work on holidays, nights and/or weekends
- Must have reliable transportation
