JOB SUMMARY
Nashawtuc Country Club is currently seeking an enthusiastic, self-motivated individual to join our culinary team. This role is responsible for recipe development and all daily production of baked goods and pastries for the restaurant and banquet functions. Keeping all recipes on file for consistency.
JOB RESPONSIBILITIES
- Prepares all baked goods, pastries and other bakery items per production.
- Sets up, maintains, and breaks down workstation according to kitchen guidelines.
- Tastes all products produced to assess quality.
- Establishes internal inventory controls which minimize food and supply waste and theft.
- Notifies Executive Chef of all product shortages and equipment maintenance issues.
- Prepares and serves items in accordance with established portion and presentation standards.
- Maintains accurate counts on all food items prepared ensuring no discrepancies in amount of food needed verses amount of food prepared.
- Schedules production of baked goods to always maintain an inventory of freshly baked goods.
- Cleans and maintains station while practicing exceptional safety, sanitation, and organizational skills.
- Maintains neat professional appearance and observes personal cleanliness rules at all times.
- Report to work as scheduled, in uniform, and ready to be in position.
- Maintains a professional relationship with all coworkers.
- Responds well to suggestions from others.
REQUIRED KNOWLEDGE, SKILLS, AND ABILITIES
- Should be proficient in basic knife skills, bread baking, pastry arts, candy making and advanced baking skills and techniques.
- Should possess basic knowledge to operate common kitchen equipment including but not limited to mixers, convection ovens, steamer, robot coup, pasta machine, and fryer.
- Must possess a healthy knowledge of food products, classical and modern preparations.
- Understanding and knowledge of safety, sanitation and food handling procedures.
- Cost awareness with some knowledge of budget planning.
- Ability to take direction.
- Ability to work in a team environment.
- Ability to work calmly and effectively under pressure.
- Must have problem solving abilities, be self-motivated and organized.
- Commitment to quality service, and food and beverage knowledge.
- Must be able to speak, read and understand basic cooking directions.
MIINIMUM QUALIFICATIONS
- Minimum two (2) years as a Pastry Chef or Assistant Pastry Chef in a club, hotel, restaurant or resort.
- Accredited Pastry Arts/Baker/Pastry Chef degree highly desirable.
- Previous Country Club experience a plus, but is not required.
