Description
Under the supervision of the Executive Sous Chef, this position is responsible for the oversight of all daily operations of the kitchen during the shift. This position, with assistance from the Executive Sous Chef, is responsible for planning and directing all food preparation, ensuring that the kitchen team is producing quality food, and assisting with staffing and scheduling. This position is responsible to meet and exceed New Freedom Company Standards while maintaining a positive work environment, high levels of product quality, cleanliness, productivity, and efficient use of company resources.
DUTIES AND RESPONSIBILITIES:
- Assists the Executive Sous Chef in executing regular and modified menus according to established guidelines that include healthy eating plans, dietary restrictions, and allergies.
- Follows standardized recipes, ingredient portions, and presentation standards including tasting completed meals to ensure quality.
- Prepares all food items as directed in a sanitary and timely manner with kitchen team.
- Completes and utilizes Daily Operation Procedure work sheets.
- Provides ongoing training and development with all food services staff, including but not limited to food preparation, safe handling, operation of equipment, food safety and sanitation, and ongoing professional development.
- Maintains cleaning and maintenance schedules for equipment, storage, and work areas. Ensures kitchen staff follow and complete schedules as assigned.
- Maintains inventory of food and non-food supplies to stay within established guidelines while ensuring the necessary product is available when needed.
- Works with Executive Sous Chef regarding utilization of food products while staying within New Freedom’s guidelines.
- Complies with Federal, State, and Local Health and Sanitation regulations and department sanitation procedures.
- Leads, motivates, and trains new kitchen team members.
- Assists in inventory and ordering control.
- In addition, all other duties as assigned.
Requirements
QUALIFICATIONS AND EDUCATION REQUIREMENTS:
- Strong ability to multitask, time management skills, punctuality, and strong hygienic practices
- Computer skills knowledge – MS Office (Excel, Word, Outlook, Teams, etc.) to log kitchen supplies, complete required trainings, and respond to department/company communications
- Excellent interpersonal and problem-solving skills, also demonstrating receptiveness to learning new skills and knowledge while on the job, especially as it relates to the use of chemicals and understanding basic safety procedures
- Ability to maintain confidentiality and demonstrate an understanding of HIPAA
- Versatility, flexibility, and a willingness to work within constantly changing priorities with enthusiasm
- Must be willing to learn and ask questions, accept feedback and be accountable, demonstrating initiative when working alone and/or as part of a team
- Must be able to lift 30-50 lbs. and stand for extended periods of time
- Comprehensive knowledge of food preparation and kitchen operations, with a focus on quality, production, sanitation, food cost controls, and presentation required; extensive banquet and institutional and batch cooking experience preferred
- Minimum of two (2) years of culinary/kitchen experience required
- High School Diploma or GED required
- Valid AZ driver’s license may be required
- Successful clearance of annual MVR may be required
- Successful completion and maintaining of valid Food Handler’s Certification required
- Successful clearance of pre-employment criminal/county/state background check
- Successful clearance of pre-employment drug and alcohol testing
- Successful clearance of annual TB PPD testing
