Job Summary
Provides leadership, support and guidance to ensure that food quality standards, inventory levels, food safety guidelines and customer service expectations are met. Ensure that cost effective operations are in place to support all. Provide leadership, direction and guidance for the overall administration of the Dietary Department. Must be able to perform the essential job functions of dietary aide, cook, and dishwasher positions for purposes of training and assisting when there are call-outs.
This position manages the Dietary department to ensure nourishing, palatable, well-balanced diets meet the daily nutritional and special dietary needs of each resident, consistent with laws and regulations and accepted nutritional standards while allocating department resources in an efficient and economic manner.
Responsibilities and Duties
- Manage kitchen operations by directing and coordinating activities consistent with established goals, objectives, and policies
- Opens and closes kitchen daily ensuring accurate staff and supplies are available
- Reviews menus and supervises the handling, preparation, and storage of food
- Responsible for checking and maintaining required food temperatures at all times
- Oversee distribution of additional foods as necessary.
- Order and track all food and supplies necessary to operate efficient kitchen operation
- Leads equipment maintenance and kitchen sanitation. Must obtain and maintain Sanitation Certification
- Assigns work schedules for food service employees and monitors time cards
- Maintains weekly budget in coordination with Nutrition Coordinator
- Establish and monitor staff performance and goals, establish priorities, conduct annual performance appraisals, and administer salary adjustments
- Responsible for performing a yearly equipment, raw food, and supply inventory.
- Must be able to multi-task
- Must be able to complete MDS information as needed.

Qualifications and Skills
- Certified Dietary Manager or Certified Food Service Manager designation where required in accordance with CMS and/or State/County law, or must become certified within a maximum of 9 months from enrollment.
- Certified Dietary Manager: 1 year experience preferred.
