Job Description: A Kitchen Manager (KM) for Oregano’s assists the General Manager in driving profitability by controlling food cost and supervising daily Back of House operations. The KM will guide the kitchen team to uphold the Oregano’s mission of serving great food and treating every visit like a special occasion. Specific targets and food cost goal percentages vary based on the restaurant location and season.
Duties/Responsibilities:
- Completes all opening and/or closing procedures including daily pre-shifts with the team.
- Ensures that all food items and products are stored, prepared, and served based on recipe, preparation, and portion standards.
- Manages weekly inventory and 2-3 truck orders and deliveries per week.
- Conducts line checks, prep lists, par sheets, pull thaws; maintains HACCP logs; maintains quality standards, sanitation, and cleanliness.
- Owns food cost and waste (responsible for actual vs. ideal).
- Adheres to state and local food safety guidelines and codes.
- Manages labor cost and develops an effective kitchen schedule to ensure coverage and maximize operational efficiencies.
- Reduces kitchen staff turnover through consistent on-the-job coaching, training, cross-training, and developing.
- Administers Team Member reviews, corrective action, and coaching in a timely manner.
- Participates in interview and hiring processes, using Applicant Tracking System.
- Writes detailed shift notes daily regarding events, operations, sales trends, products, and staff.
- Documents and reports Guest and Team Member incidents and/or accidents that take place during shift.
- Acts as a role model in conduct, dress, and Guest interactions, performing all duties and responsibilities according to the written General Standards of Conduct and Guidelines and Responsibilities in the Oregano's Team Member Handbook.
Requirements:
- Must successfully pass a background check (credit, driving, and criminal).
- Must have a valid Driver’s License (issued by working state) and have use of a properly maintained, licensed, and street-legal vehicle.
- Excellent interpersonal and Guest service skills.
- Must be computer literate; be informed regarding Windows and Microsoft Office based management reporting, Aloha, Table Management, OLO, and Compeat Radar.
- Proficiency communicating (speaking, reading, and writing) in English.
- Must be able to handle the pressures of simultaneously coordinating a wide range of activities and recommend appropriate solutions to restaurant problems.
- Flexibility to work 50-hour workweek (comprised of varied shifts, including weekends and holidays); time away from work is approved and taken in accordance with established policies.
