Cook- Springside at Seneca Hill
The Cook will coordinate food service operations; prepare nutritionally balanced meals; menu planning and preparation; supervise work activity of dietary staff; assure compliance with food establishment regulations and internal policies and procedures.
Prepare food daily as outlined on the weekly menu plan. Menu planning; review and adjust menus to accommodate foods in season, vendor sale prices, special events and holidays. Alter or adapt recipes to accommodate special dietary needs of residents or to improve recipes. Recipes should be prepared with little or no added sodium. Order food and supplies from approved vendors. Maintain a written inventory of dry goods, refrigerated and frozen foods, non-food supplies, dishes and utensils. Keep up-to-date Dietary Restrictions forms for residents who inform Springside of dietary restrictions. Schedule staff weekly, and coordinate and assign tasks to employees and volunteers involved in the dietary program. Encourage and support resident participation in the dietary program for recipe suggestions and menu review. Train and supervise the work activity of all cooks, food service assistants, and all kitchen staff, and evaluate job performance of each. Ensure compliance with regulations/laws pertaining to food handling, storage, sanitation and use of chemicals. Ensure safe and proper use of equipment, appliances and utensils. Coordinate serving process and participate in serving food as needed. Use portion control to minimize waste, and use appropriate presentation of food to enhance visual appeal and taste. Assure proper handling, storage and labeling of all foods and ingredients, including leftovers, in accordance with NY food establishment regulations and Springside at Seneca Hill policies and procedures. Maintain a clean, orderly and safe kitchen environment. Maintain an accurate record of chargeable meals (residents, guest and catered meals) and non-chargeable meals (residents, employee and marketing meals). Operate food service program within budget. Identify and inform supervisor of the need for non-routine supplies, dishes or utensils; order only with prior permission from supervisor. Notify supervisor of equipment/appliances malfunctions.
HS Diploma or GED preferred. Experience / interest in working with active seniors. Excellent customer service and communication skills. Must have a polite and courteous attitude and be a team player. NOTE: This facility is open 365 days a year - weekends and some major holidays are required
