Assistant Kitchen Manager
Reports to: Kitchen Manager
Pali Mountain’s 250-acre alpine site is nestled in the heart of the San Bernardino mountains, 90 minutes from most of Southern California, regularly serving up to 700 guests per meal.
Summary
The Assistant Kitchen Manager’s responsibility is to assist the Kitchen Manager in providing a smooth-running kitchen that serves high quality, tasty cuisine, on time, on budget in a friendly and professional manner.
Pali Mountain has 3 business units, a summer camp, an outdoor school, and a conference center.
Meals are produced out of our circa 2015, 27,000 sq ft dining hall, which has one of the largest commercial kitchens in Southern California boasting state of the art equipment and 5,500 sq ft of working space.
Essential Duties
- Produce quality buffets.
- Ensure the kitchen is clean, organized and in spotless condition.
- Cook and oversee other cooks.
- Assist with managing prep schedules and food production.
- Perform managerial tasks such as scheduling, processing timesheets for payroll, and completing a monthly expense report.
- Oversee meal service when the Kitchen Manager is not available.
- Maintain a minimum customer quality score and consistently strive to improve customer experience.
- Oversee repairs of kitchen appliances and set up systems for regular service intervals.
- Assist with ordering food as needed.
- Assist with managing food costs and waste.
- Monitor the food and liquor inventory levels.
- Assist with menu design.
- Adjust menu to accommodate guests with specific dietary concerns.
Education and Experience
- Associates or bachelor’s degree in Hotel or Restaurant Management or Business.
- 2-3 years supervisory experience in food service.
- 2-3 years cooking experience, preferably buffet style restaurant.
Salary and Benefits
- $24-$28 per hour DOE plus bonus.
