Responsibilities/ Essential Job Functions
- Responsible for initial, as well as on-going training of cooking staff for the entire La Posada Campus.
- Maintains food cost within budgetary guidelines.
- Ensures allocated labor and FTE budget are followed for kitchen staff. Maintains HACCP food safety, temperature logs, sanitation, waste logs and other production forms related to Dining Services.
- Assist with menu planning, offering ideas for recipes to Executive Chef.
- Works closely with purchasing agent to obtain quality products at the best price.
- Pro-active participant with service staff.
- Trains and evaluates and supervises all food production staff. Fills in for cooks as needed. Must follow guidelines and responsibilities set forth for cooking staff .
- Works closely with the Executive Chef and Executive Sous Chef to ensure catered functions are prepared and served according to proper setup and delivered in a timely manner.
- Teaching cooking classes as needed throughout the La Posada Campus.
- Visibility in all Dining Rooms.
- Other duties deemed necessary by the Dining Services Director and Executive Chef.
- To adhere to personal grooming guidelines and regulations as set forth by La Posada.
