The PASTRY LEAD COOK 1 essential purpose is to prepare food for restaurant, outlets, banquets and catering events and meeting hotel standards of production quality and quantity.
The expected base wage range for this position is: $18.00 to $22.00 per hour. This position may be eligible for additional compensation according to the Company’s policies, as they may be amended from time to time.
ESSENTIAL FUNCTIONS:
- To communicate all guest requests to an appropriate supervisor in a timely and professional manner.
- To read and organize food tickets in a timely manner with precision
- To read BEO’s for banquet and catering events.
- To cook and plate several desserts at the same time during service
- To assist the Chef de Cuisine, Chef de Partie, Executive Chef and Executive Pastry Chef in Kitchen organization.
- To support Kitchen employees to maintain highest possible levels of employee morale and department productivity.
- To prepare desserts for the restaurants, the café, banquet and catering events, while ensuring that quality and quantity standards are being met.
- To assist in inspecting the cleanliness of the floor, walk-ins and kitchen stations.
- To ensure foods are stored and served at proper temperatures and to rotate food in walk-in to minimize waste and spoilage.
- To taste and monitor presentation of all food served to guests, and ensure that appearance and quality are consistently maintained.
- To report to supervisors all needed equipment repairs.
- To follow all specified procedures to open or close the kitchen.
- To assume all duties of the Chef De Partie in his/her absence.
JOB KNOWLEDGE & EDUCATIONAL LEVEL: English fluency required. Spanish fluency helpful. Must have advanced knowledge of production and operations in a Pastry kitchen. Must be familiar with proper use and maintenance of relevant kitchen equipment and machinery. Hotel restaurant and banquet experience of a minimum 3 years and professional culinary certification or degree preferred. Familiar with OSHA, local Department of Health regulations and Covid protocols. County of San Diego food handler’s card required upon hire.

WORKING ENVIRONMENT: Ability to work weekdays, weekends, and holidays is required. Works both indoors and out, depending upon service needs. Business levels may require fast work pace. Indoors: clean, well-lighted area. Frequently works behind hot ranges. Makes frequent short trips to refrigerator, freezer, and storeroom. Kitchen may be moist, warm, and odorous from cooking foods. Kitchen floor may be slippery from moisture and grease. Outdoors: exposed to outdoor temperature variation. Bi-level structure.
PHYSICAL DEMANDS: Stands and walks short distances throughout shift. Pushes, pulls, and lifts to perform routine job tasks. Frequently required to handle and move objects weighing up to 50 lbs. over short to moderate distances. Must be able to work under pressure. Frequent use of stairs. Flexibility and good reflexes required to operate electric cart, valid driver license required.
