Job Summary
The Executive Sous Chef provides excellent cooking skills including verifiable knowledge of food preparation methods. Develop and create flavorful dishes/ menus that suits the clientele base and are profitable. Complete the designing of new recipes, planning menus and selecting plate presentation. Coordinates all daily functions within the kitchen such as scheduling kitchen staff, purchasing products, developing menus, processing paperwork, food cost controls in food prep and production. Assists and manages the development of menus for event functions. Must comply with food safety and sanitation guidelines.
Communicate and manage work place expectations with staff. Provide ongoing training and coaching of team members. Promote a positive work environment by working alongside staff for continued development. Monitors break and break documentation for kitchen staff. Works to control labor costs through effective scheduling and cross training of employees. Any other tasks assigned by leadership.
Must have passion for coaching and developing the kitchen with a solid record of accomplishment in achieving financial results. Friendly, guest orientated with the highest degree of honesty and integrity and a good disposition with staff. Maintain an excellent attendance and they should make themselves available to the restaurant especially at variable and event driven times including nights, and weekends with long hours as needed. Ability to be self-directed, detail oriented, and multi-task while directing others in a teamwork environment. Obtaining feedback on food and service quality, and handling customer problems and complaints.
Qualifications
Associate's degree (AA); or two to three years of related experience and/or training preferred.
Three to five years of strong culinary background with high volume/event driven restaurant management experience preferred.
Certification as a Certified Executive Chef by the American Culinary Federation preferred.
Food Safety and Sanitation Training required.
