Job Summary:
Manage culinary operations for Tatsu-yas full-service restaurants - focusing on training, quality control, and menu development.
Responsibilities:
- Lead and train Chef de Cuisines, Executive Sous Chefs and General Managers on Culinary Standards.
- Balance quality control with assigned culinary development projects.
- Uphold Tatsu-ya's culinary standards and mission alignment.
- Oversee new product training and development.
- Perform regular audits and advise on corrective actions.
- Assist with hiring and semi-annual performance reviews.
- Develop and refine culinary SOPs.
- Conduct efficiency studies for labor and menu costs.
- Maintain and update culinary resources.
- Coordinate special events and support marketing initiatives.
- Regular reporting and strategy meetings.
Qualifications:
- Experience as an Executive Chef/CDC in full-service dining.
- Skilled in recipe development and food costing.
- Strong attention to detail and multitasking ability.
- Professional attitude and open to feedback.
- Proficient in digital tools and fluent in English.
- Valid food manager's certificate in Austin.
- 5 years of industry leadership experience.
