What are the responsibilities and job description for the Cook position at Southside Market & Barbeque?
We are looking for a new team member for our USDA Plant! Southside Market has been around since 1882 and is the oldest BBQ joint in the state.
We started selling freshly butchered meat off a back of a wagon and week our history alive on a much bigger scale in our Plant.
We have a variety of products including brisket, chicken, ribs and more. But here at Southside we are known as the sausage capital of Texas.
Our Plant Pit Cook will be in charge of the production of a variety of meats. The BBQ they make will be packaged in our plate production line and sold in store meat markets, retail stores, and online ecommerce store.

Some weekends maybe needed with overtime depending on production needs.

Under the direction of a Plant Manager, prepares and seasons meat. Utilize wood-burning pit and rotisserie smokers to smoke high quality meats.
Primary Responsibilities and Duties :
- Prepare all smoked meat items to the Southside Market's time and temperature standards.
- Use and follow all Southside Market Pit Tools, including but not limited to the drop sheets, par sheets, and waste logs.
- Clean all pits, rotisseries, and flats to prevent pit fires.
- Keeps meat cooler maintained, cleaned, and organized.
- Follows all Southside Market & Barbeque recipes.
Skills and Experienced Required :
- Willingness to work and capacity to learn.
- Prior cooking experience required. BBQ Cook experience is a big plus!
- Ability to obtain a food handlers certification prior to starting
- He / she must often lift and / or move up to 80 pounds
- The noise level in the work environment is usually moderate to loud. The ambient temperature of the pit area is higher than the other departments due to the proximity of the wood burning fires.
