POSITION SUMMARY
Stratton is seeking an experienced Pastry Chef to join our Food and Beverage team! The Pastry Chef will oversee all production and distribution of baked goods throughout Stratton's various food and beverage outlets, as well as our catering events.
This role will actively contribute to improve service, quality, and financial profitability through training, product development and strategic planning.
This is a full-time year-round position that is benefit eligible with a compensation range of $58,000 - $63,000 annually.
ESSENTIAL DUTIES
- Effectively plans and produces all baked goods in accordance with outlet needs, business demands and event orders.
- Executes daily production of pastries for Benedict's, Base Camp, Table 43.1, Mugs and other locations as required.
- Manages Base Camp operations seasonally, including but not limited to equipment maintenance, menu development, placing product orders, meeting staffing requirements, adhering to and implementing Stratton food safety & sanitation requirements, including HACCP documentation and proper product rotation, and guest satisfaction.
- Places all product orders through commissary and ensures proper product pars are met.
- Maintains product specifications and ensures recipe standards are followed. Performs quality checks amongst all outlets on a regular basis and takes corrective action as needed.
- Works with the Resort Executive Chef on seasonal menu planning and testing.
- Maintains
- Works with Resort Executive Chef for all support needs including staffing, product requisition, and equipment maintenance.
- Effectively manages a team of up to ten team members, ensuring they are continually developed and trained in accordance with company standards.
- Develops and produces weekly schedules in accordance with labor budget.
- Reviews Net Promoter scores on a regular basis and responds to guest comments accordingly as they pertain to the department.
- Successfully completes and stays current with company issued trainings.
- Efficiently and accurately performs monthly product inventory, enters into FoodTrak in accordance with deadlines.
- Oversees seasonal staff training of production, presentation, and sanitation.
- Attends meetings as requested.
- May be required to assist Outlets / Executive Chefs with other duties as assigned including catered events, special functions, and filling staffing needs at other outlets.
QUALIFICATIONS, KNOWLEDGE, SKILL AND ABILITY REQUIREMENTS
- EDUCATION : CULINARY DEGREE / CERTIFICATE PREFERRED
- EXPERIENCE : 2-5 YEARS KITCHEN MANAGEMENT EXPERIENCE
- Current Servsafe Food Protection Manager Certification

PHYSICAL DEMANDS AND WORKING CONDITIONS
- Ability to lift and carry at least 50 pounds
- Ability to stand on feet for shifts of 8 hours or longer
- Ability to work in both hot and freezing temperatures throughout one shift
This position may be required to work evenings, weekends and holidays.
Food Service Environment :
- Most work tasks are performed indoors. Temperature is moderate and controlled and the noise level in the work environment is usually moderate.
- Must be able to stand and exert well-paced mobility for up to 8 hours in length at a time over an average shift of 8 hours.
- While performing the duties of this job, the associate is regularly required to stand; walk; use hands to finger, handle, or feel;
reach with hands and arms; stoop, kneel, crouch, or crawl and talk or hear.
- Frequently required to climb or balance and taste or smell.
- Regularly lift and / or move up to 50 pounds on a regular and continuing basis.
- Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus.
- Occasionally exposed to wet and / or humid conditions; moving mechanical parts; fumes or airborne particles; toxic or caustic chemicals.
- Talking and hearing occur continuously in the process of communicating with guests, supervisors and other employees.
- Vision occurs continuously with the most common visual functions being those of near vision and depth perception.
- Ability to wear personal protective equipment including but not limited to : non slip footwear and gloves.
