Description
Preparation of all food items on departmental menus, kitchen prep, quality control, sanitation of work area. Ensure accurate communication to provide effective management of food related aspects of hotel kitchen operations. Assist in ensuring both food and labor costs meet company standards.
Requirements
ESSENTIAL FUNCTIONS:
- Preparation of all food items on departmental menus.
- Kitchen prep and quality control.
- Sanitation of work area.
- Maintain cleanliness in walk-ins and dry storage areas.
- Responsible for all opening procedures.
- Check in and properly store deliveries, label boxes, rotate fresh stock and verify inventories.
- Understand operation of all kitchen equipment, ensure it is safe and sanitary operation.
- Ensure adequate staffing levels at all times.
- Ensure cooks report to work on time, properly groomed, in clean uniform with name tag.
- Train staff members in production, sanitation and quality control.
- Maintain portion and cost control.
- Inform supervisor if any server/bartender requests food without a ticket.
- Ensure orders include a micros generated ticket.
- Ensure prep work has been completed in accordance with established procedures.
- Other duties as assigned by Timberline management.
- Actively participate in RLK and Company’s Health & Safety Program by identifying and reporting potential hazards, reporting incidents, and promoting a healthy workplace
- Exercise stewardship of all RLK and Company facilities and environments, ensuring that efforts are made to reduce, reuse, and recycle when the opportunity is present.
- Regular and reliable attendance.
QUALIFICATIONS:
- Must have minimum 3 yrs Line Cook experience.
- Must have excellent knife skills.
- Must have excellent cleanliness and sanitation practices.
- Must be efficient, detail orientated and capable of following established procedures.
- Must be able to run and work a line independently. Know temperatures on soups, etc.
- Must have valid Oregon Food Handlers permit.
- Must conduct his/herself in a courteous and professional manner.
PHYSICAL REQUIREMENTS:
- Must be able to lift 50 pounds.
- Must be able to carry 50 pounds up a staircase.
- Must be able to work on feet, stand and walk for up to 8 hours at a time.
- Must be capable of bending and kneeling.
- Must be able to keep up with the pace of the department/position demands.
