About the role
This role is responsible for:
- Manage partners to ensure reliable, predictable and sustainable delivery of wine to TWE specification.
- Supporting the development of long term sourcing plans to deliver growth ambition
- Work to TWE policies and safe work practices at TWE and partner sites
- Ensure TWE’s China COO sourcing and winemaking activities are undertaken in accordance with TWE policy and processes
- Working with partners and growers to ensure grapes are sourced to TWE requirements and quality targets, including
- Assessing fruit for maturity, quality and compliance with TWE standards
- Co-ordinating pick decisions, intake logistics and winery planning
- Working with winery partners to ensure fruit is processed to TWE requirements and style, including
- Participate and be actively involved in tastings that are required to check quality of bottled wine and develop the portfolio of wines the winery is responsible for
- Develop and maintain a system for capturing information of potential available fruit and processing capacity within regions
- Source, compile and provide information (reports, presentations, proposals, etc) to support planning and operational requirements
- Partner and build relationships with key external suppliers (transport carriers, industry bodies).
- Onboarding new growers
- Managing grower’s adoption of TWE “best practice” models and protocols (e.g. pruning, yield management, disease management, sustainability)
- Co-ordinate vintage vineyard and fruit grading practices, procedures and reporting
- Functional responsibilities as required to manage production steps in the winery.
- Accurate and timely cellar note generation and communication to cellar
- Timely preparation of all bottling wines to meet the scheduled production dates. Ensuring wines are compliant and in-spec (LIP requirements, quality requirements and style requirements).
- Quality assurance of all responsible wines through periodic organoleptic and chemical monitoring, to ensure suitable style and quality is maintained.
About you
- Tertiary qualifications preferably in Winemaking, or Science related field, WSET 3 preferred
- 3 years’ experience in vineyard and winery operations in China with understanding of:
- Competency in wine sensory evaluation
- Understanding China and international wine food safety and regulations
- Winery or food processing experience
- Viticulture cycle and different Chinese viticulture regions
- Winery operations from grape intake to bottling
- Winemaking steps and critical control points
- Quality driven winemaking
