This position is for a new restaurant therefore the creation and implementation of systems will be a large part of the Head Chef role prior to the opening date. We are seeking an organized and motivated individual to establish Twelvemonth as a destination restaurant in the Bay Area.
Summary of Position:
The Head Baker has ownership of all things related to our bakery, including pursuing plant-based innovation and maintaining an organized and efficient process for regular operations. The Head Baker runs their area with attention to detail and creativity, creating a vibrant culture and a healthy team setting where everyone contributes. They execute Twelvemonth’s high standards and hold their team accountable to these standards.
Duties & Responsibilities:
- Attend all Leadership Team meetings.
- Set a positive tone and strong work ethic, leading by example.
- Train and educate the team on Twelvemonth’s process and policies.
- Communicate information and any changes to the team.
- Manage quantities to be baked, ensuring we have stock but also keeping waste to a minimum.
- Work with Chef to set the menu for pastry offerings, keeping a balance of maintaining/innovating pastry offerings.
- Cost out offerings to ensure margins are correct.
- Try new recipes and tweak as needed, without fear of failure.
- Manage the schedule for the team.
- Keep responsible areas clean and presentable, modifying checklists as needed to maintain a clean environment.
- Keep Inventory for baking related ingredients and order, or report to Chef to order as needed.
- Assess what needs accomplished, then prioritize and delegate.
- Keep the team motivated and working, checking for quality and thoroughness.
- Notice if equipment operates properly and report any maintenance needs
- Comply with health and safety regulations.
- Assumes 100% responsibility for quality of products served.
- Handles, stores and rotates all products properly.
- Performs other related duties as assigned by the Kitchen Manager or manager-on-duty.
- Create a culture where we seek out and embrace simple, elegant, efficient, and impactful ways to improve our craft with fun and mutual respect.
- Manage staff to a high standard. Give timely feedback to staff and be receptive to and available for feedback from staff to improve operations.
Qualifications:
- A minimum 4 years of bakery experience.
- At least 12 months experience in a similar capacity.
- Be able to reach, bend, stoop and frequently lift up to 50 pounds.
- Be able to work in a standing position for long periods of time (up to 8 hours).
- Must have and maintain food handler certification.
- Ability to lead and develop a team, maintaining a positive work environment.
- Strong coach/mentor. Ability to direct and motivate a staff of up to 20.
- Strong conflict resolution and H/R skills.
- Ability to understand and present oral and written instructions.
- Communicate effectively with all levels of staff on a regular basis.
- Ability to multitask effectively.
- Ability to work in a fast-paced environment cleanly, efficiently and with a strong sense of urgency.
- Ability to work full-time including some weekends and holidays.
Job Type: Full-time
Pay: $70,000.00 - $90,000.00 per year
