Role Overview: The Sous Chef plays a pivotal role in the culinary leadership of our kitchen operations. Collaborating closely with the Executive Chef, this position is integral to the overall management of the kitchen, including menu execution and the maintenance of our high-quality standards.
Key Responsibilities:
- Participate as a key member of the leadership team, guiding the property towards success through effective supervisory practices, particularly in performance management and team motivation.
- Assist in managing kitchen staff through scheduling, payroll oversight, evaluations, hiring, and terminations.
- Act as a mentor within the kitchen, fostering the growth of the culinary team through training and coaching.
- In the absence of the Executive Chef, take on full leadership responsibilities, overseeing kitchen staff and production.
- Ensure the culinary experience for guests is exceptional by supervising the preparation and cooking of food items, maintaining our Five Star standards.
- Monitor all aspects of food production, including ordering, inventory management, cost control, and quality assurance.
- Utilize culinary expertise to propose and develop innovative menu items that align with Twin Farms' brand identity.
- Plan and execute culinary offerings for special events and holiday functions.
- Serve as a liaison between the kitchen and other departments, promoting collaboration and teamwork.
- Ensure adherence to safety procedures and policies, maintaining organized workstations and sanitation standards.
- Perform additional duties as assigned.
Qualifications:
- Culinary education and/or relevant experience in fine dining preferred.
- Prior experience in a fine dining kitchen environment is essential.
Working Environment:
- Fast-paced environment with dynamic demands.
- Physical activity includes standing, walking, and occasional lifting of up to 50 lbs.
- Requires flexibility in scheduling, including weekends and holidays.
