Txikito, a chef driven Basque restaurant, is seeking a dynamic, energetic and wine passionate General Manager to lead our incredible team of talented and dedicated professionals
The GM role at Txikito:
This position is painted in broad strokes. Txikito's GM is responsible for all daily restaurant operations as they relate to the 'front of the house' functions in our small but very busy independent restaurant.
As Txikito’s GM one must regularly exercise impeccable judgment and discretion in matters of importance to our daily operations, long held beliefs and reputation.
Duties and preferred skills include:
- Expertise in using a variety of POS and reservation platforms as well as Google office suite
- Maintain a small focused Wine list and spirits inventory system
- Beverage purchasing experience is required (Order all wines with continuity, propose BTG and Bottle progressions) maintain pars on all beverage mise en place and supplies
- Indesign/Acrobat proficiency preferred for menu updates and events
- Private Event experience preferred
- Responsible for Daily Admin and document updates, continuity and creation
- Adept at Inventory management of tabletop, office supplies, sanitation and bar needs
- Scheduling (and payroll reconciliation) experience required
- Detail and oriented
- Excellent written and verbal communication skills
- You are great at identifying potential in others, recruiting, and training and supporting employees
- You lead an inspiring lineup to maximize employee curiosity and engagement
- Posses a natural inclination towards document and systems creation and maintenance
- Bar Management/Bartender experience preferred
- WSET or CMS certifications very useful
- Having an affinity for Spanish language, wine and gastronomic shorthand is a tremendous asset
- Posses a tactical understanding of COGs and strategic aspects of restaurant reporting and cover management
- Possess a distinct fact based food and wine vocabulary
- Credentials include 3 years of service and or bartending experience complimented by 2 years as a manager or junior manager
- Please be organized and prepared to bring systems and ideas that create community and foster team work while promoting order, discipline, and professionalism and accountability
- Possess and Project a neat confident well-groomed appearance
- You must have or immediately obtain an NYC food handlers certificate from DOH upon hire

70-80k depending on experience and credentials

The General Manager must achieve operational and sales goals for the restaurant
Lead, train and recruit members capable of supporting and joining a pooled, cross-trained team.
Foster an atmosphere of cooperation, professionalism, enthusiasm and trust.
Functional role:
The General manager is present alongside the team a minimum of 5 evening shifts a week to harmonize, inform, and support the team and ensure they acquire and retain broad restaurant and company specific knowledge and fluency they can access to deliver excellent service.
During service, as needed, you respectfully guide BOH employees through any challenges and use your strong emotional intelligence clarify, motivate and align the team. In moments of stress you are capable of maintaining momentum, quality and an even temperament.
You maintain a high standard of service detail at all times, provide feedback and model best practices reinforcing great habits and showing solidarity with the team.
Your awareness of department of health compliance and DOL compliance, are always at work to maintain the premises in good standing and repair. When possible you remedy observed issues in the moment and update postings for compliance.
As part of an intimate management team, the General Manager works with and reports to chef-owners also enjoys support through a cohort of enthusiastic managers from our Brooklyn restaurants; La Vara and Saint Julivert Fisherie.
Together, General Managers are meet inter-company financial goals, identify and act on opportunities for growth, update inherited systems and find cost saving solutions across the restaurants. Respond to events inquiries. Each GM is expected to share their specific gifts and knowledge with other managers who in turn share their unique areas of expertise with the Txikito GM such that our small family owned restaurants benefit mutually from one another. And, managers acquire new skills and can support one another with scheduling challenges

Credentials and acquired qualifications:
Ideal candidate possesses significant expertise in FOH operations and has worked virtually every position in a tipped house.

You have worked for highly organized mentors and have chosen the independent restaurant and with you a deep regard for order and a positive view of restaurants and their potential to uplift.
You generously provide informed professional service, to new and established guests and easily acquire language based intelligence around food and beverage.
The GM leads service and beverage programs in tandem and maintains, updates and produces the backoffice systems, manuals and materials, including wine notes and cocktail changes and instructional materials according to our style guides

Salary : $70,000 - $80,000
