Sous Chef
We are looking for a Sous Chef to join our team here at the UT Golf Club. The Sous Chef will be responsible for the day to day operations along with the Executive Chef and Executive Sous Chef. We are responsible for the main restaurant, bar, private dining room, pool kitchen, banquets, employee meal, member events, wine dinners, cooking classes and food for the beverage cart staff. We are hoping to find someone who can be flexible, creative, positive, energetic, and hard working.
Our restaurant has breakfast, an all-day menu featuring familiar country club fare that changes quarterly, as well as our Crafted Eats menu which is a small sharable plates menu. This menu is more of a fine dining experience, featuring world cuisine, but with a more casual and approachable atmosphere in the restaurant. This menu is constantly evolving and changes many times throughout the year.
Requirements
Our events range from 30 people up to 1,000 people. We do both small and large scale plated events and buffets.
This person needs to be comfortable with:
Ordering
Managing a team
Inventory
Basic understanding of cost controls
Creating menu content
Execution of menu roll outs
New Dish Research and Development
Creating and working in a positive, team oriented environment
Health department expectations and overall food safety
Working with other department leaders
Quality control
Salary range is 45k - 55k, plus benefits, yearly bonuses and raises, 401k options, and other employee club perks
