About the Role and Growth Opportunity:
This position presents a pathway to scale-up into further leadership responsibility, overseeing the culinary design across the portfolio of distinctive boutique restaurants. A successful candidate will have an avenue to future career advancement based on demonstrated ambition and high performance.
Responsibilities:
1. Strategic Development and Execution:
Collaborate with owners to nail down the strategic concept of the kitchen and create dishes and details that align with the overall strategy.
Develop and implement systems and processes that will ensure smooth kitchen operations from the start.
Make decisions in line with the restaurant brand, strategic direction, and assess feasibility of new plates, dishes, and ideas.
2. Financial Management:
Meeting labor budget, maximizing revenue, and minimizing food costs.
Responsible for recipe costing strategies to increase revenue and decrease food costs without compromising on quality.
3. Recipe Development:
Lead recipe development to create standard recipes that can be replicated by anyone in the team.
Allocate time for continuous recipe development and innovation, trying new combinations and improving existing recipes.
Document all recipes digitally and ensure they are properly saved and accessible to all relevant team members.
4. Staff Welfare and Development:
Maintain a respectful and positive working environment across all team members, including constructive feedback and team development.
Provide adequate training and share knowledge to address any skill deficiencies within the team.
Listen to and encourage suggestions from team members.
5. Compliance and Documentation:
Maintain strict compliance with food safety, sanitation, and other applicable standards and regulations.
Ensure proper documentation, from recipes to disciplinary actions, ensuring all records are digitally saved and properly organized.
Qualifications:
Proven experience in a leadership role within a kitchen setting.
Strong knowledge of recipe development, food costing, and kitchen management.
Ability to make decisions aligned with the overall strategy and goals of the kitchen and brand.
Ability to teach and develop staff, promoting a positive and inclusive working environment.
Culinary Degree: Optional, in lieu of proven experience.
