Job Title: Culinary Manager
Description: The Culinary Manager is responsible for the guest experience for the Service Case, Chef inspired creation and for ordering the processed and smoked meats.
Reports To: Store Manager
Responsibilities:
- Determines the best way to prepare fresh food items
- Ordering and merchandising the department. While keeping appropriate stock levels.
- Responsible for department gross profits and labor percentages
- Writing and planning weekly work schedules
- Additional duties could include finding ways to cook multiple fresh items for the same dishes at once, creating sauces or toppings for dishes and developing the dishes themselves
- Maintain a clean and sanitized department
- Verbally receive and call back guest orders in an upbeat and friendly manner
- Follow health and safety guidelines
- Adhere to recipes and presentations for food and beverage items
- Food safety knowledge
- General knife handling
- General meat handling and preparation
- Sets up and prepares equipment for use in food production. Follows proper cooking procedures in accordance with the standardized recipe cards and the supervisors instructions to produce a uniform product.
- Utilizes all types of kitchen equipment to prepare food. Uses the appropriate following equipment: broilers, ovens, deep-fat fryers, slicers, choppers, saw, steamers, and miscellaneous small equipment such as knives, paddles, etc.
- Uses the appropriate equipment for the proper preparation and service of food.
Physical Demands:
- Ability to lift up to approximately 20 lbs. frequently and 50 pounds occasionally.
- Ability to perform the following movements repeatedly and for long periods of time,
- Walking, standing, bending, stooping, and reaching
- Grasping at or below waist level. Occasionally above shoulder level.
- Balance on wet, slick, dirty and debris-strewn floors.
- The ability to make judgments concerning the placement of merchandise, case opening procedures, unsalable product damage, conversation with customers, selling of product, display of product, use of packaging materials for product, quality of product for display and ordering of merchandise.
- Read case labels, strips, signs, tags, shelf signs, code dates, invoices, temperature gauges, reports, numbers, equipment, chemical, and aisle markers
Work Environment:
- Inside work with extreme variations in heat, cold, dust, humidity from compressors, cooler, freezer, equipment, and preparation area.
Qualifications:
Required
- Outgoing, upbeat guest interaction skills
- A desire to develop strong culinary skills
- Excellent communication skills
- High school diploma

- Food Safety Certification
