Executive Chef directs and oversees kitchen operations, including menu development, purchasing, inventory, cost control and sanitation. Creates and updates menus that will appeal to customers, utilize seasonal ingredients, and maximize profits. Being an Executive Chef develops and tests new recipes. Solicits and studies customer feedback to maintain high standards of quality and satisfaction. Additionally, Executive Chef troubleshoots and resolves operational issues. Complies with all safety and food sanitation laws and regulations. Supervises, trains, and mentors staff. Typically requires a bachelor's degree in culinary arts or equivalent. Typically reports to top management. The Executive Chef typically manages through subordinate managers and professionals in larger groups of moderate complexity. Provides input to strategic decisions that affect the functional area of responsibility. May give input into developing the budget. To be an Executive Chef typically requires 3+ years of managerial experience. Capable of resolving escalated issues arising from operations and requiring coordination with other departments.     ESSENTIAL DUTIES
    • In collaboration with the Culinary Arts Program Director, manages college and Foundation catering events including, but not limited to, Chef’s Table, Modernist, catered functions on and off campus, dinners, fund raising events, donor lunches, and senior capstone.
    • Provides career-oriented instruction and support to students to assist them in the development and/or improvement of culinary arts skills.
    • Participates in menu development, conducts related instruction and production of items for college sponsored catering events. Integrates the use of locally grown foods from campus farm when available and appropriate.
    • Provides quality instruction by using effective lesson plan development and strategies, and maintains budgeted costs based on lab fees and event related food costs.
    • Maintains and submits instructional records in accordance with requirements.
    • Provides lab and event requisitions for products by established deadlines; maintains assigned cooler according to sanitary standards; provides data and records for orders; maintains working relationships with vendors to ensure quality within parameters outlined by the Program Director.
    • Participates in purchasing, monitoring of inventory, and maintenance and upkeep of equipment for program.
    • Attends and actively participates as a team member in meetings, and student or program assessment, as directed.
    • In collaboration with the Culinary Arts Program Director, helps develop and market programs and assists with recruiting effort. Establishes relationships and outreach to K-12 students and staff to increase awareness and develop pathways to college success in career and technical fields.
    • Acts as an ambassador for the College and participates in extensive relations with many constituencies of the College.
    • Maintains professional ethics and confidentiality of students in accordance with applicable laws and policies.
    • Works professionally and collaboratively with college faculty and staff to aid with successful student learning outcomes.
    • Works in accordance with FVCC mission and goals.
    • Ensures local, state and federal health codes are met and the kitchen facilities and equipment are used and maintained in a safe and sanitary manner.
    • Remains current in practices, trends and research related to areas of assignment.
    • Attends division/department/team meetings, related trainings, workshops, and professional development.
    • Cross trains to perform other departmental and team functions; backfills for staff as needed.
    • Actively participates in the development of a climate that promotes and supports innovation and efforts to continuously improve services to students, faculty, and the College.
    • Creates and maintains a collaborative and collegial environment with colleagues and maintains effective working relationships.
    • Maintains professional ethics and confidentiality of students in accordance with applicable laws and policies.
    • Advances the mission of FVCC by serving on or convening committees and contributing to the community in college-related activities.
    • Performs other duties as assigned.
    • Reports to the Program Director of Culinary Arts.
    MINIMUM QUALIFICATIONS
    • Four years of experience in a professional culinary environment, OR,
    • An equivalent number of years of postsecondary education in the career/technical discipline, combined with work experience in the career/technical discipline.
    PREFERRED QUALIFICATIONS
    • Experience teaching in a culinary arts program.
    • Professional industry experience in providing service, hospitality, menu planning, food preparation and catering.
    • Experience as a chef in a renowned institution.
    • Experience in providing quality catering services using a variety of instructional methods to facilitate student learning.
    • Experience teaching baking and pastry, purchasing, savory, or service. For example: Fundamentals of Cooking, Catering, Fundamentals of Protein Cookery, World Cuisine, Baking and Pastry, Nutritional Cooking, Purchasing and Cost Control, Culinary Sous Chef, Artisan Breads, Wedding Cakes, Menu Planning, Food and Beverage Service.
    KNOWLEDGE, SKILLS, AND ABILITIES
    • Skill in creativity and innovation in programming and menu planning.
    • Skill in using a broad array of vendors both locally and globally.
    • Ability to use a student-centered approach in the work environment.
    • ability to work within policies and procedures of FVCC.
    • Ability and willingness to act as an ambassador for the College and the Culinary program by interacting appropriately with the public, students, potential students, staff, and College community.
    • Ability to maintain effective and positive professional relationships.
    • Ability to follow and issue directions.
    • Demonstrated communication, technology, presentation, customer service and interpersonal skills.
    • Ability to work effectively with people from a variety of culturally diverse backgrounds.
    • Ability to intermittently work non-traditional schedules including evenings, weekends, etc.
    • Ability to maintain regular and acceptable attendance levels.
    • Ability to maintain a high degree of confidentiality.
    • Ability to successfully pass a criminal background check.
    • Ability to respond in the event of an emergency.
    • This is a Medium Duty job, according to the Selected Characteristics of Occupations Defined in the Revised Dictionary of Occupational Titles, U.S. Department of Labor and Industry. Medium Duty involves exertion of 20-50 pounds of force occasionally, and/or 10-25 pounds frequently, and/or up to 10 pounds continuously to move objects.
