Executive Chef directs and oversees kitchen operations, including menu development, purchasing, inventory, cost control and sanitation. Creates and updates menus that will appeal to customers, utilize seasonal ingredients, and maximize profits. Being an Executive Chef develops and tests new recipes. Solicits and studies customer feedback to maintain high standards of quality and satisfaction. Additionally, Executive Chef troubleshoots and resolves operational issues. Complies with all safety and food sanitation laws and regulations. Supervises, trains, and mentors staff. Typically requires a bachelor's degree in culinary arts or equivalent. Typically reports to top management. The Executive Chef typically manages through subordinate managers and professionals in larger groups of moderate complexity. Provides input to strategic decisions that affect the functional area of responsibility. May give input into developing the budget. To be an Executive Chef typically requires 3+ years of managerial experience. Capable of resolving escalated issues arising from operations and requiring coordination with other departments.      is currently seeking an experienced Executive Chef 2 for Central State University, located in Wilberforce, OH (35 minutes from Springfield and Dayton)

     

    Reporting to the General Manager, the Executive Chef will be responsible for the culinary direction of residential dining, catering and a satellite campus. Dining services on campus offer resident dining, a WOW Cafe, SubConnection, and a Grocery Store.

    Manage the daily food production including production planning and controls

     Culinary Standards including recipe compliance and food quality

    Manage food costing, controls and compliance

    Develop menus and manage inventory

    Have high expectations for customer service and quality of food

    Have the ability and willingness to develop and train frontline employees

    Have a passion for food and innovation

    Have knowledge of special diets and allergens; and knowledge of Sodexo Food Management System (FMS) is preferred.

    The ideal candidate has:

     

    A strong culinary background, with the demonstrated ability to stay current with new culinary trends

    Excellent leadership and communication skills with the ability to maintain the highest of standards and implements company policies

    Previous experience working in a high-volume facility; and Strong management skills.

    Position Summary

     

    Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training. Works directly with internal and external clients managing the catering process from beginning through execution. 

     

    Key Duties

     

    Implements & coordinates the culinary function. 

    Directs & trains cooks & utility workers. 

    Ensures food preparation & production meets operational standards.

    Manages catering & retail areas. 

    Customer & Client satisfaction.

    Financial management to include food cost & labor management. 

    Manages food & physical safety programs.

    Qualifications & Requirements

     

    Basic Education Requirement - associate degree or equivalent experience

    Basic Management Experience - 2 years
