Specific Responsibilities:
Responsible for the management, planning, and directing the activities of the dietary department and managing/supervising dietary staff when the Dining Services Director is absent. Responsible for food service standards, policies and procedures, equipment, systems, city and state regulations, and work areas while providing the highest quality of food service for Residents. Coordinates closely with care staff to ensure resident's needs are constantly being met, as needed.
Promotes the IRIS mission statement.
Working Relationships:
Reports to: Dining Services Director and/or Executive Director
Works closely with:
Executive Director, Wellness Director, Marketing Director, and Caregivers
Interfaces with:
Residents and their Family and Friends, IRIS Nurses, IRIS Department Managers, all IRIS Team Members, Third Party Service Providers, Professional Referral Sources, and the General Public.
Primary Essential Job Duties:
- Adheres to and conveys philosophy of supporting dignity, privacy, independence, choice, individuality, and a home-like environment for Residents.
- Preparation, presentation, and efficient meal service delivery.
- Conducts inventory, purchasing, storing, and preparation of food according to the provided menus and regulations.
- Maintains procedures to meet safety and sanitation standards in order to ensure compliance with governmental regulations.
- Prepares food items and serves food to Residents within scheduled time frame.
- Follows menu cycle, noting changes or substitutions made.
- Cleans and maintains food service areas, including kitchen and dining room.
- Ensures compliance with state and local health department sanitation code.
- Orders all supplies and maintains inventory control. Verifies orders received, ensuring needed goods are on hand. Ensures that all budgetary guidelines are achieved.
- Maintains quality of food services, quantity prepared, and sanitation of food preparation area.
- Maintains clean, neat, and safe working environment.
- Ensures that Resident food needs and preferences are known. Coordinates menu requirements of the resident with the care staff, as needed.
- Ensures staff, Resident, and guest meals are accounted for daily.
- Maintains meal service records as required.
- Reports problems, concerns, and issues observed with food service and communicates them appropriately.
- Ensures that meals are prepared in accordance with established menus for each meal and per state regulations.
- Follows procedures to ensure that kitchen sanitation is maintained on a daily basis with training for each IRIS Team Member.
- Maintains coolers and food storage areas to standard.
- Ensures all food handling is in conjunction with local and corporate health and sanitation requirements.
- Ensures that health department inspections are on file and rating is within corporate guidelines.
- Observes changes in Resident status, needs, or preferences and communicates them appropriately.
- Observes other problems and communicates them appropriately.
- Observes all work, safety/OSHA and administrative policy training in performing all job assignments.
- Adheres to all established policies and procedures.
- Records Resident information as required.
- Avoids loss, breakages, and waste of supplies and equipment.
- Demonstrates knowledge of and adheres to procedures for fire, life safety, disaster, security, work, safety, and other emergency procedures.
- Knows and implements infection control protocols as required.
- With consultant dietician, monitors nutritional status of Residents using regular assessments, progress notes, and dietary care planning, if required.
- Prepares timely reports as may be requested/required by federal, state, local agencies, etc. to include kitchen inspection violations with a plan of action for correction, as required.
- Develops and conducts, in conjunction with the consultant dietician, regular inservice education to increase staff skills and knowledge.
- Adjusts recipes/menus to meet nutritional requirements of Residents with assistance of consultant dietician.
- Ensures correct procedures in preparation of food and inspects quantity, quality, temperature, and appearance of food prior to serving.
- Evaluates resident acceptance of menu items and makes substitutions available as requested or required.
- Establishes and maintains records/receipts regarding dietary operations. Submits purchase invoices and receipts to the appropriate staff for processing to include coding as requested.
- With consultant dietician, develops, establishes and maintains nutritional service plans for Residents, as needed.
- Coordinates needed supplies for events and/or activities with the Marketing Director and/or the Life Enrichment Director, as needed.
- Maintains Confidentiality/HIPAA requirements.
- Attends in-service training as required.
- Reports all suspicions of abuse, neglect and/or financial exploitations of a Resident immediately to the supervisor, as described in the IRIS policy and procedures on reporting.
- Maintains and protects the confidentiality of resident information at all times.
Secondary Job Duties:
- Performs other tasks as assigned by the supervisor.
Qualifications
Job Qualifications:
- One to two years experience in a similar position preferred.
- Working knowledge of rules and regulations related to health and safety in food preparation.
- Demonstrated ability in food preparation and services.
- Supervisory experience in dealing with older adults and their food needs preferred.
- Twelve (12) plus years of education preferred.
- Meet continuing education requirements and certifications on job classification and position, including state and local requirements.
- Successful completion of an approved state food service supervisor course as required.
- Management/supervisory experience is necessary.
- Ability to prepare and serve a wide range of foods skillfully.
- Ability to perform and instruct others in food preparation, food serving, and cleaning tasks.
- Maintains acceptable attendance records/follows work schedule.
- Organizes and utilizes time appropriately toward accomplishing assigned tasks.
- Requires minimal supervision.
- Displays cleanliness, good grooming, and personal appearance and follows dress requirements.
- Provide annual verification of a negative TB skin test.
- Ability to recognize and communicate problems appropriately.
- Ability to react quickly and calmly in emergencies.
- Ability/willingness to learn new skills and to teach others.
- Interacts in professional manner with Residents, public, and co-workers.
- Works cooperatively with management.
- Displays willingness to assist co-workers when situation requires.
- Ability to communicate proficiently in English, verbally and in writing.
- Ability to lift up to 50 pounds occasionally; 35 pounds regularly.
- Routinely requires pushing, pulling, bending, walking, reaching, and stooping.
- Maintains car in good working order, current drivers license in good standing, and auto insurance meeting company minimums is current.
- Ability to organize their time, follow-up with the ability to perform job tasks efficiently.
- Ability to teach/train others effectively.
- Availability to work evenings, weekends and holidays as necessary.
- Demonstrates as a team player with a positive attitude; able to work with IRIS Team Members and IRIS ownership/management staff.
- Ability to maintain accurate records and provide information as requested and required.
