What are the responsibilities and job description for the Kitchen Crew Member position at Leo's Market and Eatery?
JOB SUMMARY
The Kitchen Crew Member works in support of the store management team to maintain operational standards and procedures of the restaurant. Culinary duties include preparing fresh meal items from scratch along with proper inventory rotation, and general food service cleaning duties (both front of the house and kitchen cleaning). The KCM will also be cross trained on cash register duties and other related functions. The KCM ensures an exceptional customer experience through premium food quality that supports our vision to be the first choice in food and convenience.
PRINCIPAL DUTIES
1. Wash, cut and prepare a variety of produce as well as slice and portion meats.
2. Execute sequence and time of cooking operations to meet daily production needs.
3. Prepare menu items according to Leo’s recipes and food quality standards.
4. Become familiar with menu items/dishes by tasting foods to determine their quality, texture, consistency, and flavor.
5. Follow daily production sheets, record in writing the quantities of food items prepared, served, leftovers and waste on the daily production sheet.
6. Complete all opening and closing checklists; complete cleaning lists.
7. Assist in the assembly and set-up/breakdown of serving line.
8. Provide and assist on the job training to new hires and student employees, as directed by store management.
9. Check in external and internal vendors according to corporate procedures.
10. Complete training and enforce local, state and federal regulations with regard to the sale and handling of age restricted products and the sale of full service or self-service petroleum products.
11. Complete Environmental training.
12. Cross Train with Market Operations.
SAFETY AND SANITATION
1. Maintain temperature logs and take temperatures of food regularly and record data as instructed by management.
2. Maintain quality and sanitary standards of State and City Health Departments
3. Maintain clean and orderly work area and complete other general cleaning duties, such as mopping/sweeping floors and emptying trash cans and clean equipment.
4. Report to management any safety hazards and equipment in need of repair.
5. Assists in keeping the kitchen, refrigerators and store rooms sanitary and orderly by cleaning utensils, equipment, fixtures and work areas.
REQUIRED FUNCTIONS
1. Work in a team-driven environment, be open minded to feedback, offer direction and assist with problem-solving.
2. Greet customers entering store location and follow customer service guidelines.
3. Ability to lift up to 45 pounds and bend, stoop and kneel while stocking shelves.
4. Ability to learn and understand basic culinary knowledge (i.e. weights and measurements).
BASIC QUALIFICATIONS
1. High School Diploma or GED equivalent preferred.
2. Reliable transportation.
3. Serve Safe Food Handler Certification (To be completed during training, if not already certified).
4. Food Allergy Training (To be completed during training, if not already certified).
5. Previous from scratch cooking and baking experience preferred.
