Greens is seeking a Pastry Chef to lead our pastry & bread program. The Pastry Chef of Greens Restaurant is responsible for overseeing and executing all pastry department operations. The Pastry Chef directly manages the entire pastry team and upholds the quality of the pastry program. The Pastry Chef is a key member of the kitchen management team and reports to the Executive Chef.
Key Responsibilities Include:
o Oversee all aspects of pastry department operations
o Manage and monitor staff performance
o Create a kitchen environment that both cultivates the culture of Greens and also allows
for the growth and development of staff members
o Hold employees accountable for showing up on time and professionally executing their
job description
o Maintain a strong presence in the kitchen while upholding standards and culture
o Ensure cleanliness protocols are being followed and executed daily
o Attend weekly back of house management meetings (30 minutes or less) and bi-weekly
management meetings.
Execution of The Menus
o Create, design, and implement recipes for the dessert menu that are seasonal & farm-focused
o Work with kitchen management team to produce breads for the restaurant as needed
for dishes and menus
o Manage the preparation and execution of all pastry & bread recipes for all menus
o Train pastry staff in order to maintain the integrity of food that is expected at Greens
o Participate in line-ups for FOH staff to learn the menu and ask questions
o Connect with the FOH staff and be available to answer questions and train staff about
the menus
o Maintain menus on Toast and DoorDash, including menu photos and descriptions
Control Costs
o Work with executive chef to maintain food cost
o Reduce waste wherever possible, especially food waste
o Perform inventory for pastry department as assigned by Executive Chef
Compensation & Benefits
o $75,000 salary (Commensurate with experience)
o Healthcare insurance, dental, vision, vacation, 401K, sick time & personal days
o 40 hour work week (with rare exceptions around busy holidays)

o Minimum experience of 2 years as pastry chef or 5 years of pastry production experience - 1 Month Ago
